Happy Birthday Cupcakes, courtesy of Speical Correspondent Ellen

These are perfect for birthdays, according to Special Correspondent Ellen. As we know, if Ellen says it, it must be true.

Chocolate Cupcakes

[less than] 3/4 c margarine
1 2/3 c sugar
2 eggs
1 tsp vanilla
1 tsp instant coffee
a pinch of cayenne pepper
2 1/4 c flour
2/3 c cocoa powder
1/4 tsp baking powder
1/2 tsp baking soda
1 tsp salt [optional]
1 1/2 c water
Mix margarine and sugar, stir in eggs, vanilla, instant coffee, and cayenne pepper. Combine the flour, cocoa, baking powder, baking soda and salt; stir into the sugar  mixture, alternating with the water,  until smooth. Boil at 370 for 20 -30 minutes. Allow to cool, then ice with
Caramel Frosting
1/2 c margarine
1 c brown sugar
1/4 tsp salt
6 tbsp plain soy milk
3 c confectioners’ sugar
Melt margarine in a pan, stir in brown sugar and salt. Bring to a boil; allow it to boil for 2 minutes, stirring constantly. If you are not stirring, your caramel is becoming burnt ash. Remove from heat and add soy milk, stirring all the while. Return mixture to heat and bring to a boil again. Remove from heat and allow to cool for approximately 20 minutes. Stir in confectioners’ sugar and beat until smooth and cool enough to spread. You might need to add a few ladles of soy milk if frosting is lumpy; it helps to have one person slowly pour in the soy milk as the other person stirs.

  1. Is there really cayenne pepper in these cupcakes???

    I kind of want cupcakes now… please make me some! They better be as delicious as Stern Shabbas cupcakes!
